Grain contains fermentable sugars inside a protective husk. This husk needs to be broken prior to adding it to your brew kettle to get at those sugars. This process is called cracking or milling. A grain mill is used for this process and provides several benefits: 1) it allows you to crack your grains immediately before you brew to ensure freshness, 2) it provides cost savings by enabling you to purchase unmilled grain in bulk, and 3) because the size of the resulting grist particles has a huge impact on the finished beer, a good grain mill will have variable settings allowing for finer or coarser grinds.
