The mash tun is the vessel where mashing and sparging take place. Mashing is the process that combines crushed malts with hot water to convert complex starches into more readily fermentable simple sugars. Upon completion of the mashing process, a suspension remains in the mash tun; sparging then separates the sugars from the grains.
