Calandrias are a type of heating element, a heat exchanger to be specific, designed to heat wort through steam and bring it to a vigorous boil inside the brew kettle. A well designed calandria does this quickly and efficiently and provides a larger area for heating the wort than direct fire. There are two common installations of the generally-tubular calandria: 1) it can be integrated into the inside of the brew kettle or 2) it can be attached externally via piping and a pump.
